INGREDIENTS (serves 1)
- 150g salmon
- 5g coconut oil
- 50g English spinach
- 50g cucumber
- 50g cherry tomatoes
- 30g radish
- 15g avocado
- 70g mango
- 1/2 lime
How to make:-
- Melt coconut oil in pan and cook the salmon steak
- Chop all the salad ingredients and slice the mango and avocado into thin strips
- Mix together in a bowl and drizzle with juice of half lime
- Once fish is cooked, cut into squares and toss into the salad
